Heat and transport
Buttercream, whipped cream and chocolate do not cope well with heat. In summer, ask the pastry chef for recipes suited to the heat, delivery at the last minute and a cool place to store the cake at the venue. Transporting it along the winding roads of the hinterland also takes experience.
The tasting
As with the caterer, a tasting lets you choose the flavours. Schedule it once the dinner menu is set, so that the meal is well balanced.
